Wine Varietals

While there are thousands of wine selections and brands, six major groups of wine exist – RED, WHITE, ROSE, DESSERT, SPARKLING/CHAMPAGNE and FORTIFIED. The color, flavour and name are determined by the type of grape used, and the fermentation process. A wine can be light, medium or full-bodied. Light-bodied wines are easier on the palate, while full-bodied wines are weightier.

RED WINES

  • Grape skins packs are included in some 5 week wines and all 8 week wines

Full Bodied Reds ~ Big, bold and pronounced tannins with intense fruit flavours
Amarone, Barolo, Bordeaux blends (Bordeaux are made from the following grapes, Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec and Carmenere), Cabernet Merlot, Cabernet Sauvignon, Cabernet Shiraz, Carmenere, GSM (Grenache, Syrah, Mourvedre) , Rosso Fortissimo, Shiraz/Syrah, Super Tuscan, Vieux Chateau du Roi, Zinfandel

Smooth Reds ~ Soft, juicy and mild tannins, fruit forward wines
Malbec, Malbec Shiraz, Merlot

Fruity Reds ~ Light, crisp and refreshingly acidic, subtle fruits
Brunello, Chianti, Pinot Noir

WHITE WINES

Rich White ~ Rich, buttery wines
Chardonnay

Fruity White ~ Soft, Floral, tropical and fruit flavours
Gewurztraminer, Liebframilch, Muller Thurgau, Viognier

Crisp White ~ Light, crisp and refreshing! Citrus and fresh green herbs
Chenin Blanc, Pinot Grigio/Pinot Gris, Riesling, Sauvignon Blanc

ROSÉ

  • Prices range from $120 to $170
  • Production time 4-8 weeks
  • Yields 30 x 750ml bottles (23ltrs)

Can vary from dry to enjoyably sweet! Also very refreshing; enjoying the crispness of a white wine and fruity flavours of a red
White Merlot, White Zinfandel, White Shiraz

DESSERT

  • Prices range from $140 to $180
  • Production time 5 – 8 weeks
  • Yields 11.5ltrs 60 x 375ml bottles

Rich, Lush and full bodied with balanced acidity. Aromatics are distinctive and vary for each sweet wine
Ice wine – Cab Franc

SPARKLING/CHAMPAGNE

  • Yields 30 bottles
  • Extra cost for carbonation $30

Fine bubbles are produced during second fermentation process. We recommend Chardonnay and Blush Zinfandel wines for Champagne or Sparkling wine.

FORTIFIED

  • Production time 9 weeks
  • Yields 11.5ltrs 60 x 375ml bottles
